Buffalo Chicken Ranch Grilled Cheese (Printable)

Crispy sandwich with spicy buffalo chicken, sharp cheddar, and creamy ranch on buttery golden bread.

# What You Need:

→ Buffalo Chicken

01 - 2 cups cooked chicken breast, shredded
02 - 1/3 cup buffalo sauce (such as Franks RedHot)
03 - 1 tablespoon unsalted butter, melted

→ Cheese & Dressing

04 - 1 cup sharp cheddar cheese, grated
05 - 1/2 cup mozzarella cheese, grated (optional, for extra melt)
06 - 1/4 cup ranch dressing

→ Bread & Assembly

07 - 8 slices sourdough or hearty white bread
08 - 4 tablespoons unsalted butter, softened (for spreading)
09 - 2 tablespoons chopped green onions (optional, for garnish)

# Directions:

01 - In a mixing bowl, combine shredded chicken, buffalo sauce, and 1 tablespoon melted butter. Mix well to coat the chicken evenly.
02 - Lay out the bread slices. Spread a thin layer of ranch dressing on one side of each slice.
03 - On four slices, layer half the cheddar cheese, then divide the buffalo chicken mixture evenly on top. Sprinkle with mozzarella (if using) and top with the remaining cheddar cheese.
04 - Place the remaining bread slices ranch-side down to close the sandwiches.
05 - Spread softened butter on the outside of each sandwich (both top and bottom).
06 - Heat a large skillet or griddle over medium heat. Cook the sandwiches for 3–4 minutes per side, pressing gently, until bread is golden brown and cheese is melted.
07 - Remove from heat, slice in half, and garnish with chopped green onions if desired. Serve warm.

# Expert Advice:

01 -
  • The hot sauce and cheese create this perfect sweet spot between spicy and comforting that nobody can resist
  • It comes together faster than ordering delivery and tastes way better than anything that arrives at your door
02 -
  • Medium heat is your friend here because high heat burns the bread before the cheese melts
  • Let the sandwiches rest for about a minute after cooking so the cheese sets slightly instead of running everywhere when you cut them
03 -
  • Mayo instead of butter on the outside bread actually creates an even crispier crust that does not burn as easily
  • Put a lid on the skillet for the last minute of cooking to help the cheese melt completely without over browning the bread
