02 - 4 cups mini marshmallows
03 - 3 tablespoons unsalted butter

# Expert Advice:

01 -
  • They're ready to share in less than an hour, which makes them perfect for last-minute gatherings or unexpected cravings.
  • The combination of crispy and chewy is oddly addictive—once you have one square, you'll find yourself reaching for another.
  • You can dress them up with chocolate or keep them simple, making them adaptable to whatever mood you're in.
02 -
  • The moment you remove the pan from heat is critical because residual heat keeps the marshmallows workable but also keeps the mixture from cooling too fast and becoming unmanageable.
  • Don't skip the cooling time or refrigerate them to speed things up, because they need room temperature to set properly and maintain that signature texture.
03 -
  • Buttered hands or utensils throughout the process prevent sticking and make cleanup infinitely easier.
  • If your mixture starts to harden before you've pressed it into the pan, pop the saucepan back over the heat for literally 10 seconds—just enough to loosen things up again without starting from scratch.
